Peanut Butter Cookies

The kitchen remodel is on hold still (for the most part) until the countertops arrive, but that’s not stopping me from doing a little baking! So yesterday, I made some peanut butter cookies – one of my husband’s favorites and I really like them too. Here’s a pic of one cooling on the cooling rack:

These are sooooo good. I’m not sure where this recipe came from, which is very unusual, as I always try to write those things down. For some reason, I didn’t so I can’t credit anyone. But, whoever you are, thank you! Here’s the recipe:

3/4 c sugar
3/4 c brown sugar
1/2 c oil
1 egg
1 tsp vanilla
1/2 c peanut butter (I use crunchy)
1 1/2 c. self-rising flour
Mix all ingredients well. Roll into small balls and place on ungreased pan. Flatten with fork dipped in sugar. Bake at 350 degrees for 8-10 minutes. Remove from pan immediately.
